Quito Ancestral Foods

San Francisco -Plaza Tianguez 1903 by Andrew Howe
It`s interesting to investigate our past , communities that inhabited the old Quito, where borders were natural boundaries , streams , lakes , forests ... many people have commented that reach the Hacienda La Delicia (within the neighborhood Cotocollao ) was an adventure. And to say about the food they ate back then?

You knew about " Llullucha "? Well known for the populations of the Andean region , in fact quoted was a food for its high nutritional and medicinal content. It is an algae that occurred in the streams and used it with stewed , as in the traditional Locro .

Until now there is talk about " Cuzos " and in the chronicles of some historians note that with some amazement describe eating these insects ( beetle larvae ) or worms accompanied by potatoes , were a delicacy for many , were in cultivated fields, and they sold in markets in baskets , it is said that even ate the roasted alive and well . But is not sorpenderse as these delicacies not only has enjoyed in the old Quito but even today people of the east also within your diet keep known Chontacuro , which is but another larva of a beetle grows Chonta .

Also talk about the " Churos " it`'s really interesting, these have been found in many diggings along with kitchen utensils used by ancestral communities . These snails were reared in humid banks of the north and south of Quito, the collection should go a long way due to the lagoons and wetlands that had at the time. They are preparing a clay pot or a pan , they are covered with very hot water , so sprouted molluscs and tore his only edible part.

There is much to talk about our customs and traditions ... a good portion of them will be shared on board the First Mobile Restaurant Casa 1028.
